Entry Requirements  

Working within the industry – apprenticeship based only


This qualification is delivered in class and is comprised of 21 core units and 4 electives taking around 15 months to complete.

This course will provide you with hands – on experience in areas from the preparation and cooking of meats, fish, fresh pasta, gnocchi, breads and desserts through cost effective menu development and working effectively in a team environment. Options are available for people for are already working in the Industry.

Classes are either Monday or Tuesday  9am – 2.30pm.

This qualification reflects the role of commercial cooks who use a wide range of well-developed cookery skills and sound knowledge of kitchen operations to prepare food and menu items. Using discretion and judgement, they work with some independence and under limited supervision using plans, policies and procedures to guide work activities.

Pathways from the Qualification

After achieving SIT30816 Certificate III in Commercial Cookery, individuals could progress to SIT40516 Certificate IV in Commercial Cookery, SIT40616 Certificate IV in Catering Operations or SIT40716 Certificate IV in Patisserie.

CCAE does not offer the above qualifications.

This qualification provides a pathway to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafes, cafeterias and coffee shops.
